Overnight Banana Oatmeal Oats

School has been in for about a week in my house and I am dying to find ways to make the morning easier!  (Or, in other words… to be able to sleep in just a little bit longer). One easy fix has been to do my breakfast the night before! I came across this recipe and found it to be so easy and so DELICIOUS!  My kids LOVE it. The original pin is here.

This is how I made mine:

2 servings
Ingredients:
1 large ripe banana, mashed (about ½ cup)
¼ cup creamy peanut butter (I used Adams brand, sticking with the healthy theme)!
1 cup oats (Do not use quick cooking oats!)
1 cup unsweetened almond milk
1 tablespoon Tri-Omega Superfood. I LOVE adding this to my breakfast. I feel better, and it is a great way to sneak healthy omega 3,6 and 9 in your kids’ breakfast. ½ teaspoon vanilla extract
½ teaspoon ground cinnamon
1 teaspoon honey

Directions:
Mash your banana with a fork
Add the remaining ingredients and mix REALLY well
Cover your bowl with plastic wrap and stick it in the fridge overnight. 
Stir up your oats in the morning and eat! 
I thought this would taste really weird because it is cold but it is actually really delicious!  So delicious I even took an awkward selfie of myself with the bowl (since all my kids are in school).

Oh - and this is vegan and gluten free!
