One Pot Pasta

I started to see this pin popping up ALL OVER Pinterest and just had to figure out what all they hype was.  To be honest, I was totally skeptical because it just… well… kind of looked gross and flavorless!
12 ounces linguine  (I just used a 1 lb. box)
12 ounces cherry or grape tomatoes, halved 
1 onion, thinly sliced
6 cloves garlic, thinly sliced  (I just used the crushed garlic you can buy in the    produce section)
1/2- 3/4 teaspoon red-pepper flakes (I used 1/2 teaspoon)
2 sprigs basil, plus torn leaves for garnish
2-3 tablespoons extra-virgin olive oil, plus more for serving
kosher salt and freshly ground pepper
4 1/2 cups water
Freshly grated Parmesan cheese
Combine pasta, tomatoes, onion, garlic, red-pepper flakes, basil, oil, 2 teaspoons kosher salt, 1/4 teaspoon pepper, and water in a large straight-sided skillet. Bring to a boil over high heat. Boil mixture, stirring and turning pasta frequently with tongs, until pasta is al dente and water has nearly evaporated, about 9 minutes.
Season to taste with salt and pepper, divide among 4 bowls, and garnish with basil. Mix in Parmesan cheese to taste (we used a ton) and enjoy!
My Opinion:  My kids and I stuck all this in and thought the pictures were pretty, but just really couldn't figure out how the heck it tastes SO DANG GOOD!!!!  But, I am happy to say it does and it is such an EASY dish to prepare!  Perfect for this time of year where we are getting more and more busy for back to school!
